I make chili - 1 packet ortega chili spice, 1 can diced tomatoes (15 oz), 1 can kidney beans. Brown the ground chicken, add spice, tomatoes and beans with the liquid and cook for about 15 minutes. I serve over spaghetti.

I just had fried breaded Eggplant, then add ground meat mixture in between and cover with Eggplant , some people like to bake it either plain or with tomato sauce!

I used ground chicken for wraps.
I 'stir fried' it with mild salsa sauce with a bit of salt and pepper.
I placed it in a wrap with lettuce and cubed tomatoes. ( I once included sauted onions in it as well...)

Chinese-type dish-
Brown the chicken. mix with cooked noodles and Chinese type veggies (baby corn, peppers, water chestnuts, etc)
mix together:
1 cup chicken broth
¼ cup soy sauce
1 tbsp cornstarch
pour over meat and noodles, and let it simmer for about a minute

Chicken hamburgers
Just chop an onion, a tomato, a red pepper, some carrots, and some mushrooms. Stir-fry and set aside.
In a bowl, mix ground chicken with breadcrumbs, egg, salt, pepper, and whatever other flavoring you like. Then mix in the veggies and make patties.
Stick on the grill or in your george foreman until cooked and voila!
The veggies make it juicier AND are a great way to sneak veggies to picky eaters...
