My dh's ideal friday night meal is schnitzel with mashed potatoes and mushroom gravy, since I ovbiously cant fry it on the spot, I dont know how to heat it so that the chicken stays moist yet crunchy.
I tried wrapped in a paper towel and covered and it was moist but not crunchy
I tried uncovered and it was dry and hard like a rock
anyone know the secret?

I used to leave it uncovered on a piece of foil on the blech

my suggestion would to leave it uncovered on the top of the blech or oven, then have the gravy super hot to compensate for the lack of heat from the chicken. thier is no sure fire way to keep schnitzel crisp in the oven if you cant take it out right when you see its getting dry.
