just take whatever recipe you have and replace milk with equal parts of pareve milk and water ...

There is a recipe in the Kosher Palette 2 for Velvety Broccoli Soup. It is creamy, but actually has no milk or creamer. It's delicious!

I like the one from the balebustes cookbook
It doesnt use milk or creamer you make a roux using flour, oil and water

That roux trick makes incredible soup. I did a mushroom soup that just had roux, chopped onions and mushrooms, and broth. It was terrific!
