I know it's the easy way out but I buy the cheapest brand of matzah ball mix and follow directions exactly. Each packet makes a lot so when they cool I freeze however many I need at a time and freeze them in baggies.

matzah meal
eggs
oil
seltzer.
it's all in the consistency. combine ingredients so you can just barely form balls from the batter.

I use the matzah meal and go by the box recipe if you want it a little lighter instead of water put seltzer. Oh ya let it rest for ten min no more or they get harder.

I use these proportions: 1/2 cup matza meal
2 T. seltzer
2 T. oil
2 eggs.
Mix well, season. Chill. Cook in a large pot and cook covered, this helps them stay fluffy.

If you like them fluffy add a drop of baking powder. Delicious!
