The rule of thumb is to cook with what you like to drink.

We like to make drunken chicken with rum. I also use it occasionally in baking (my honey cake recipe calls for bourbon but I prefer to use rum)

Any semi-sweet or dry wine is good.
For red, any cabernet sauvingon like Zmora, Baron Herzog, Jeunesse, Barkan.
The same brands also make sauvignon blanc which a good white wine.

I like to use Kesser Eminent, it's a semi-dry and has no added ingredients.

Depends what you are cooking
Asian foods benefit from sherry or sake
Beef stews or braises use red wines of some kind. I use Merlot in beef stew but have used other red wines
Marsala is traditional for chicken marsala
Stout or beer is delicious in some beef stews
I don't get the most expensive wines but I do get a wine that would be considered fine to drink
