Making from scratch, so it needs to be fed every 12 hours for 2-3 weeks. Allowed? Or not allowed?

I don't think it's allowed but I have a starter I didn't feed every 12 hours and it's fine.

Totally not allowed Smile
That’s לש
But I’ve made starter numerous times and feed it right before Shabbos and right after Shabbos.

You can't feed it on Shabbos but It's fine. You can just keep it in the fridge to slow the process
