Gonna make challa dough, will have lots extra and limited freezer space.
What else can I make with the dough?

Yummy garlic knots. Super simple.
Roll out one part dough to cookie sheet shape.
Cut 15 strips across and one down,
Knot and spread onto cookie sheet @475* for 7-9 min..
When still warm roll and mix in a container that has a mix of 1/4 cup oil, 1 tbs parsley flakes and 6 cubes garlic .
Done!

Make a pocket & fill w cheese (optional: pizza sauce) make only enough for supper because milchig bread needs to look different.

Cinnamon buns- roll out, oil+cinnamon+brown sugar, slice and roll into pan. Drizzle bottom of pan with brown sugar

Spiral hot dogs.
Roll out some dough into a long piece. Wrap it in a spiral motion around a hot dog. Brush with some egg-wash and bake until the dough is cooked through.
My kids love this!

I use it for pizza.
if you use it for cinnamon buns do you need to make hamotzi on them? asking because I always thought you were supposed to use juice in a yeast dough to make it mezonos.

As long as one loaf is used for regular bread challah can be taken with a bracha

Hafrashos challah goes based on the quantity of the flour. Depending on who you ask you may need to take challah without a bracha on certain amounts of flour.
Large batches of babka also need a bracha.

I asked and was told that if I am making cinnamon buns with my challah dough they are mezonos. (Was also told that the sweet challos some people make on rh could be a question if they are hamotzi)

Sufganiot! Wrap 4 or 5 chocolate chips in little balls of dough. Make sure the chocolate is completely embedded in the dough. Fry until done, then roll in powdered sugar. My friend makes these with jelly that she inserts with a syringe but I am too lazy and anyway, I like chocolate better. 🙃
