I use the one from Spice and Spirit. If you don't have it and no one else responds before I have a chance to post it, I'll post it if you want. Tell me. I have to go get my kids from the bus now. Gotta go!!

Don't know if you're interested, but if you want to "cheat" a little to make it easier, you can use the MyTFine lemon flavored pudding and pie filling mix, (it's pareve). It just cuts out (for me) the very tedious step of standing over the custard, not to mention all the times I stood over it and it didn't come out right anyway...You can use it with the recipe in Spice and Spirit, that's what I do...

I have an easier way to cheat.
bake a pie crust till lite brown, let it cool. In a separate bowl mix a can of lemon pie filling with just enough lemon juice to make it lemony but not too watery. Pour that into the pie crust. whip up some egg white and sugar (whatever a recipe might call for, I'm not sure of measurements) and bake like the recipe says too for the eggs to become cooked. and voila! totally cheated but totally good.
