ISO butternut squash soup recipe

I lost my old trusty one.
Don’t want anything with broth, just a simple classic recipe. The old one I had had carrots as well I think but open to all!
Looking to make a huge pot, blend, and freeze.

Adena Susanna has a delicious one in her cookbook but I’m pretty sure if you google Adena sussman orange soup it will come up as well

I just sauté diced onion and garlic, add cubes of butternut squash and sauté another few minutes. Sometimes I’ll add chunks of peeled squash and carrots. Add water to almost cover vegetables. Let it simmer for about an hour or when vegetables are soft. Blend with immersion blender. Add fresh or frozen parsley, salt and pepper.

I don’t want to use some of the ingredients in the orange soup posted, and I would love exact measurements for the other post…the instagram one looks good but how much does it make? Do I need to double?

I saute onions and then add store cut fresh butternut squash..sometimes I add a little sweet potato...some salt and pepper..then I blend it when it's finished cooking. I serve with some onion garlic croutons and my kids love it.

1 Butternut squash
3 Sweet potato
2 Carrots
1 Onion
1 regular potato -optional

Boil, blend, freeze!

1 butternut squash
2 small pinions
7 cloves of garlic
Cut in large chunks
Put on baking try and roast it
Blend it
Add to pot with water
2 tsp soy sauce
1 tsp vinegar
Salt and pepper to taste
Let it boil than lower to a simmer

Fry onion and garlic
Butternut, sweet potato, carrots water
Salt pepper nutmeg and ground ginger
Blend
If you have no time you can just boil the onion together and not fry
