Is there anyway to have WhatsApp but stay anonymous?
As in when ppl have my number saved In their contacts they will not see me as having WhatsApp?

If you have another number that is not associated with you, sure. Most people dont though. Maybe a free number like Google voice could work, not sure if whatsapp accepts virtual numbers but I think they do so long as you can get messages on it etc

If you have a phone number that is associated with a WhatsApp account, when they click on your contact info (for sure on a Samsung, not sure about an iPhone) it will show that you can be “reached” through WhatsApp.
