I made chicken soup the "French way" - "with a simmer and a smile" as I heard boiling it makes it cloudy.
So I put in all my ingredients, left it on a low flame, and cooked it for 7 hours. It is beautiful and clear.
Is it safe to eat since I never boiled it?

Yes. I make mine in a crockpot, same idea. Slow cooking is safe if it's for long enough.

In the crockpot it comes out with tons of sediment.
Not saying it's not an easy option or that it doesn't still taste good. But know what the results will be.

So I'll teach you a little trick. In your pot put all the vegetables in with cold water. On the highest flame bring it to a boil. Then add the chicken/chicken bones and salt. Lower the flame to low or number 2-3. Then cook it overnight or 7-8 hours. You will get the same beautiful clear soup.
