In my opinion (in the tri state area) mature Atlantic salmon has a slight fishy taste and does not compare in taste to the more delicate baby salmon. I find the baby slices smaller pinker and tastier. Others might like Atlantic better, which is the mature salmon that swims out further.

I don’t know what baby salmon is. But I’d only purchase wild Alaskan salmon because from what I understand, everything else is farm raised and full of mercury and garbage.

AFAIK, baby salmon is the furthest from natural when comparing with Atlantic or Wild. Which is why it is more pink and tastes better than atlantic, cuz it's being fed with unhealthy stuff to make it taste and look good. Atlantic salmon is healthier than baby, but not as tasty. Wild is the most expensive, but also the best IMO. It's tasty, has a beautiful color, and is quite fatty (healthy fats).

pretty sure baby salmon is just smaller sized Atlantic salmon. at least it definitely used to be, when I lived in Flatbush. I have never seen it sold as a separate thing in the non-Jewish fish stores and supermarkets where I buy my kosher fish since moving OOT

Salmon - farmed or otherwise is actually low in mercury. They have many predators and don't live long even in the wild.

Im not sure but I find the baby salmon always has bones in it I wont buy it anymore

I might be wrong, but I believe baby salmon is actually steelhead trout.
Ask your fish monger.
