Some background: Per our minhag, we don't do a sit down meal for SS but are makpid to have a small mezonos or something. We eat around 1:30, but end up getting hungry around 6-7ish.
Looking for some ideas for filling, healthy snacks for looong Shabbos afternoons. Fleishig or pareve only. Not too carb or sugar heavy.
We are two adults, no eating-age kids.

Friut salad
Regular salad

Flat salad- I.e cut veggies (cucumber, peppers, carrots, etc) with a side of chumus, egg salad, other protein dip.
Baked chickpeas as a protein filled crunchy snack.
Baked oatmeal with tachina or nut butter inside to be a filling, nutritious mezonos. You can make this with little to no added sugar, and add in things that make it an extra special Shabbos treat.

Avocado toast
Cut melon
Deviled eggs
Tuna stuffed bell peppers
Salmon over leafy salad
Lox slices, lettuce and tomatoes in whole wheat wraps

I mean 6-7 is dinner time. Is there a reason you can't have a normal (cold pareve) dinner?

Meat Board with condiments
Cold fish platter with sauces (lox, tuna, roasted salmon) and crackers
Melon wrapped with pastrami
Cold soup shooters (gazpacho, cold pea, vichyssoise)
