I'm looking for a new challah recipe. My tried and true is getting boring. Here are the requirements:
1) Uses 2oz of fresh yeast
2) Can be made either by hand or with mixer
3) Not too eggy

Check out chezchaya on Instagram. I'm convinced there is no other good recipe around. The recipe calls for dry yeast but I use fresh yeast. We like it better with fresh yeast.. No eggs.

Mine comes out soft and delicious. I use 2 bags/2 kilos spelt flour (white), 4 cups water, 1 cup of honey, 4 eggs if you want (I use 6), 2 tblspoon salt, and 3.5 tblspoon of yeast. I bake only 23 mins at 180c.
This trick makes a big big difference in the fluffiness of the challah, roll out the pieces with a rolling pin, and then roll them into strands then braid.
