Do you want it to be fish? You can do salmon or sushi salad with fake crab

For a fish appetizer, I like to make salmon with honey mustard + Pistachios.
If you're not makpid to have fish... We normally just do challah, dips, and a green salad with lots of veggies added in.

You could do a cold soup, like a fruit soup or gazpacho.
I like to do a southwestern krab salad which is basically pico de Gallo with shredded fake crab. People love it (except the anti cilantro folks).
You could also do tuna carpaccio.

Anti cilantro folks (like me) can substitute with parsley

Flat bread with arugula on top, either salmon or kani sprinkled on, and then drizzle with spicy Mayo and Teryaki
Looks really fancy but is super easy to make - I use my leftover salmon from the night before

Combine 1 TBSP Olive oil with 1 clove of garlic (minced, or some garlic powder if you're in a hurry) salt and pepper, 2 TBSP mustard ( I combine mostly yellow mustard with a bit of whole grain), 1 TBSP lemon or lime juice and 1 TBSP honey. Mix in 1/3-1/2 cup pistachios (ground but not too finely, you want lumps-not dust...can also be achieved by banging them with a mallet or rolling pin). Spread onto salmon (I use a side of salmon but you can do it with fillets too) you want a nice crust of the mixture on the fish. Bake at 375 F for about 15-20 minutes.

Egg and liver, either chopped or hot liver with onions.
Salmon with any kind of topping on it.
Pulled beef on chummus
Chummus bassar
Salmon en croute ( in pastry with spinach)
Sushi salad
