4-5 Red peppers (I will also use yellow or orange, depending on what I can buy)
3 cloves garlic, chopped
1 T. Balsalmic vinegar
1/2 T olive oil
salt
pepper
Preheat oven to 500 or set broil
Wash and cut the peppers, remove seeds. Line a baking pan with foil. Put the pepper halves face down. Broil in oven until outside begins to pucker and blacken on parts.
Remove from oven. Lift the foil around the peppers and wrap then tightly. Let it sit like this for about 30-45 min. Open up and skin should just slide off the peppers.
Then cut them into small squares and place in bowl. Mix with chopped garlic, balsamic vinegar, olive oil, and season to taste.
You can also puree this for a roasted red pepper dip.
