I find no matter how many times I organize it, anytime I add things in after I go shopping, things get such a mess.

Conventional wisdom recommends boxes or bins labeled for each type of food. You have to take the time after each shopping trip to rearrange the contents. If you just shove your new purchases in any which way, you'll always get what you always get.

What zaq said, but if you don't want to buy freezer bins, then organize your freezer in sections.
If you're talking about a full-size freezer, you can do one shelf for fruits/veggies, one for meat/chicken, one for prepped food that needs to be baked/heated, etc.
If you're talking about a standard kitchen freezer (top freezer), you can do the same concept but give each section half of a shelf. Use the freezer door for anything in containers or small items (frozen herb cubes, etc)

I have a chest freezer. raw meats go on one side. cooked foods on other, breads on top. fish stays in a big reusable bag. Simple but pretty effective.
I also have a regular freezer with shelves so froz veg goes in there, and ice cream and pie crusts and pastry...etc.

What everyone above wrote. Plus I have a flat magnet whiteboard on which I write what’s on there. And that’s in sections. Like cooked foods. Meats. Etc. this is for a full size freezer in my garage which no matter how much I tried to keep organized I would have no clue what was in there before I’d go shopping. For example do I have 3 bags of frozen broccoli or none. Yeah I gotta update when I add or remove but I find it a huge help.
