Thank you for the replies, but I can't believe it is indefinite because even a whole, raw chicken doesn't last forever and the gefilte fish has been "processed." Have people used them 6 months after purchase?

Really depends on your freezer.
If you have deep freezer, chest freezer, or any long term type freezers, that is not opened often, it will last probably up to a year.
If your freezing it in your regular freezer that is opened multiple times a day, it will have a much shorter lifespan.
I freeze my food in the freezer according to how long I need it to last.

Yes I have.
If your freezer freezes it to rock hard (not slightly mushy) then I'd be comfortable using it for sure up to a year
