I am making chicken chow mein, but don't have bok-choy like the recipe calls for. any suggestions? or recipes without it?

well, it was something like this:
sesame oil for stir-frying
3 stalks celery, diced
2 onions, diced
2 cloves of garlic, minced
1 can mushrooms, drained
ground ginger
chili powder
cayenne pepper
4 T soy sauce
2 T teriyaki sauce
1 1/2 c. chicken soup
flour dissolved in water
diced chicken (I used 2 leg quarters and 1 breast - left over from shabbos)
stir-fry celery, onion and garlic in oil 5 min. add mushrooms and spices. (I made it only a little bit spicy - it really calls for hot sauce.) add soup and sauces and bring to a boil. mix flour and water and pour into pan and cook to thicken. serve topped with chow mein noodles.
*it also calls for brown sugar but I didn't use any.
