I make a huge huge pot of chicken every 2 months and freeze just the soup and some carrots.
I never know what to do with the rest of the vegetables and chicken.
Ideas?

I blend some of the veggies with some of the soup and make my own 'cream of chicken soup'

Use the chicken for chicken pizzas. I buy flatbreads and crumble/shred the chicken mix it with bbq sauce and make into pizzas

I only use chicken bones and throw away the vegetables and the bones.
From reading some stock recipes, it seems this is part of the recipe directions because all the flavor goes into the broth and the vegetables turn to flavorless mush.

I freeze the begins in the soup. We love our soup full of vegis when I defrost it.

I shred the chicken and make chicken burgers. One of my husband's favorite dinners!

For the vegetables, make a blended vegetable soup. Sauté lots of onion and garlic for great flavor. Add all cooked soup vegetables. Pour in water to almost cover. Heat through until it starts to bubble. Puree with immersion blender until creamy. Season very very generously with salt to taste.
*My vegetables only cook 45 min to 1 hour in my chicken soup.
Use bones instead of chicken pieces when making chicken soup, so there's less waste.

Sauté onion and celery
Add cut up soup chicken and veggies
Add some soup broth and soy sauce with cornstarch
Chicken Chow Mein!

We're fine with soggy vegetables.
I serve the chicken in the soup for supper that night.

Thanks for all the ideas!
My DH says the vegetables are garbage because all the taste and all the nutrition cook out into the soup, so it’s fine to chuck them and not considered wasting.
And that I should not repurpose them because it will be flavorless.....
Idk.....

Sounds strange to me. We eat our vegetables in our soup. Even if they have no nutritional value (I don't think this is true...), they still provide fiber.
I wouldn't repurpose them for some of the ideas listed here (pizza, etc.) because they will be mushy.

I use whole chickens and pull them out after about an hour in the pot. I debone the chicken(s) and save all the meat for chicken salad or chicken pot pie. All the bones go back in to pot to keep giving the soup more flavor until it's done. The veggies are total mush and I discard them. I guess they could be made into something - a gravy or a base for some sort of veggie kugel - but I'm okay tossing them; they've done their job.

I've only ever made burgers from raw ground chicken, can you share a recipe please?

I have the onions, garlic, celery (sweet potato) in a bag. Sometimes I mash it to get all the flavor out, usually when I'm not being lazy & I plan to strain the soup.
Usually if I'm planning to freeze some I do it then, without any carrots or squash. I add that the last hour because I DON'T like them mushy, and if I take containers out of freezer I add fresh carrots.

DH eats it fresh out of the soup on Thursday night.
I often feed the carrots to my 6-month-old niece. She loves it!
