Zuchinni soup

Need zuchinni soup recipe, can't find old thread where there were some...Can I put sweet potatoes, potatoes or carrots in this soup?

I use the recipe from the balebusta's choice (green with pictures) cookbook. I don't have the exact recpie on hand but here goes...

3 large zucchini
1 onion
3 cloves of garlic (more orless to suit your taste)
water to cover by 1"
1 potato
salt and pepper to taste

cut onion & squash into chunks. mince/crush garlic and add to pot. saute 20 minutes on low flame. add water to cover by about 1". add salt & pepper to taste (you may have to adjust seasonong later) and potato. bring to a boil and simmer 20 min. Blend soup with a hand blender and serve. YUM!

I usually leave out the potato so no carbs. It's a little creamier without the potato...You can also add water if it's too thick/simmer a little longer after its blended (uncovered) if it's too watery.

Easy Quick and tasty!
Saute 3 large onions
ADD
4 large Zuccini cut in any size and shape
3/4 of the zuccini in the pot should be filled with water.
Salt
cook for 45 minutes
use hand blender to blend!
enjoy!

Zucchini Cream Soup

1 small onion

1 Tspoon corn oil

3 or 4 medium zucchini

6 cups water or stock

½ cup oatmeal or rolled oats

½ tspoon salt

(2 T chopped parsley)



Heat oil on medium in a soup pot. Peel chop and sauté the onion in soup pot. Chop zucchini, add to onion and sauté for 3 minute. Add water, oats and salt, stirring. Bring to a boil and simmer for 15 minutes. Blend. Garnish with parsley.
