The trick to making it moist is not what you put on it, its how you cook it. People always ask me for my salmon (and chicken breast) recipe and its not for the amazing "recipe", its because of how I cook it.
I always make it as simple as I can. For chicken and salmon, just sprinkle (liberally) the McCormick rotisserie chicken seasoning. Want to get fancy? Also sprinkle on the minced onion. Put it in the oven at 400 or 425 covered for 15-20 mins (depending on thickness, for chicken, set the oven at 350) and then uncover until its cooked, maybe 5 more minutes - should be firm but not dry. That's it! And its delicious and moist.

For salmon I always pre-slice it
And bake it at a very high temp for a short time.
Because its pre sliced I can check if it’s fully cooked
I take a bunch of frozen herb cubes, mix it with oil, salt, fresh garlic. Pour on top and bake

I'm lazy, I buy the dill dip from my local takeout, slather that on the slices and dump that in the oven. I never time it. everyone always loves it.

My mom's trick is to cover salmon with a thin layer of mayo, then add spices/herbs/salt. THe mayo keeps it very moist.

Yup I've made this one and it was enjoyed by all. Don't overcook.
