I do this often looks nice super simple and taste delicious I had ladies and big bachurim and children polish this off.
Lettuce of your choice...I use either romaine or arugala.
Thinly slice red onion
Sliced pastrami
Pomegranate.
Dressing is equal measurement of each:
1/4 cup vinegar
1/4 cup sugar
1/4 cup Olive oil.

I would not do something with meat or gluten. I would stick to something simple like lettuce, cucumbers, a little red cabbage for color, cherry tomatoes with a good dressing, either s lemon or vinegar based olive oil dressing

Easy salad and good in taste making it quite often.
Lettuce
Green cabbage
Honey glazed peanuts
Omega 3 mixed nuts
Dressing you can mix your own or just put a Ceasar dressing.

I find the secret is in getting a mix of really fresh lettuce. More than one variety if possible, check as late on Friday as possible, wrap, keep in whatever freshener you have, and tear before serving.
Other items can be chopped in advance, stored separately, then tossed before serving.
Fresh sugar snap or snow peas in pods (trim ends) make a wonderful addition. I also like carrot, jicama, radish, scallions (a little milder than onion), red cabbage, and of course, cucumber, pepper, and tomato. A topping of seeds, croutons, or craisins is nice, too.
