I once had a sweet and sour chicken in a restaurant. it had carrots, pineapple, onions and pepper in it. and the chicken was cubed. does anyone knows how to make it and what to put in it for the sauce.?

Last night I made something to this effect. Please forgive me if I don't have the measurements exactly memorized.
1 lb. chicken cutlets cut into strips.
Brown them.
Add in 8 ounce can of pineapple, juice drained and reserved.
8 ounce can of water chestnuts, drained.
1/2 a red pepper cut into bite size pieces.
1/2-1 C. broccoli florets (I used chopped).
Stir fry until veggies are crisp tender, about 3-4 minutes.
Into drained pineapple juice, add:
1 TBSP. soy sauce
1/2 TBSP. ketchup
1/2 TBSP white vinegar
1 TBSP corn starch (I used potato)
1 TBSP sugar
Pour over skillet, cook for about 3 minutes, add in 1 C snow peas if you have, and cook for another minute.
Serve with rice.
My thoughts on this recipe: it was pretty good and easy to make, very colorful, but I felt like the sauce didn't flavor the chicken so much. Next time I might marinate the chicken, or cut them into smaller pieces so there is more flavor for each piece of chicken.
The veggies did get flavored though, and unlike some other chinese recipes, this was pretty easy on the stomach.
