How do I prepare a chavush?
I know you boil it with sugar but do you peel it first?
How much sugar?

That's a quince, isn't it? You peel it first and cook it until it's soft and a lovely pink. Plenty of sugar, because it's pretty sour.

cook it first in a lot of lemon juice and sugar - no water. once it's a deep red, add water and simmer for just a few minutes.
