The Caribbean Chicken
from another board, with my changes
Marinate:
chicken pieces
1/2 cup soy sauce
1/3 cup lime juice
3 T brown sugar
3 T honey
dash pepper
1 minced clove garlic
Pineapple salsa:
1/4 cup water
1 cup pineapple tidbits
1 bunch green onions, cut up
1/4 cup shredded coconut
cornstarch
cooked rice
Marinate your chicken in bag with soy sauce through garlic. Drain marinade into pot and grill or bake or broil chicken until done.
Add cornstarch to the marinade and bring to the boil.
Make your pineapple salsa by, in small bowl, combining pineapple through coconut.
Serve chicken with rice and toppped with salsa.
