I have recipes that I always do, summer or winter...
I do chicken with a little oil, spices, sometimes soy sauce. or I will just do it with BBQ sauce. I put it on hi for about 6-8 hours. the last 2 hours, I would add rice or potatoes, with water.
I would also do beef stew with oil and spices, I add a bay leaf and soy suace. then again the last 2 hours I add rice/potatoes with water. I sometimes add veggies like squash, carrots, celery...with the potatoes.

I only add water if I put rice or potatoes. if I do chicken by itself, then no water. there are enough juices form the chicken a the little oil I put for it to be moist.

I make this turkey stew in the winter, but its good anytime:
Buy a small turkey breast (light meat) or thigh meat (dark meat) off the bone. Put in crock pot with 1 c water, salt, pepper and 1 tsp onion soup mix. Then add 1/2 c barley, and root veggies in large chunks: sweet potato, carrots, celery. Cook on high 6-8 hrs. If you want you can add zucchini after 4 hrs or so. Delicious, healthy and so easy.
