Pizza dough (or pita bread), sauce, cheese and assortment of toppings (olives, peppers, onions, mushrooms, etc)
Tacos - browned ground beef, chopped veggies (tomatos, lettuce, pepper, cucumbers) and taco sauce
wraps - grilled chicken, 1 or more sauces, assorted veggies - either grilled or fresh.
If you want them to do the prep:
you can bread chicken cutlets assembly line style. Choose something fun like pretzel coated chicken. One kids in flour, one in mustard, one in pretzels.

When I bread chicken I find it tastes better with corn flakes crumbs that I crush myself over the bought container of corn flakes crumbs. I put corn flakes in a ziplock and give my almost three year son loves crushing them for me.

Roll your own sushi is always a hit.
Make sushi rice
Cut up vegetables and or fruits for fillings
Cooked or raw fish as desired
Soy sauce, ginger, wasabi, sriracha
Nori seaweed
Cut each nori in half. Each person makes their own hand rolls aka rice and filing cones which you then can eat by hand.

I would stay away from raw meat with kids younger than 8? I'm totally fine with raw eggs in cookie dough, but for some reason, raw ground beef or shnitzel just makes me nervous
So homemade pizza dough (or calzones), especially since no ovens are involved until the very end.

My kids love making pizza balls from Kosher by Design, Kids in the Kitchen. You make balls of pizza dough with the cheese in the middle of each ball. Dip each one in a mixture of melted butter and spices. Then you layer them in a tube pan. To eat them, you pull off a ball and dip it in pizza sauce. They have so much fun making them and eating them.

My kids love best anything they can customize. Individual pizzas. Tacos with choices of fillings. Wraps. Sometimes we prep a variety of items for either make your own salad or make your own stir fry.
