Tilapia salad from the binah

salad: 1 8 oz bag mixed salad greens
2 ears fresh corn kernals cut off
1 lb fresh snap peas, trimmed
1/2 pint grape tomatoes, halved
1/2 red onion sliced
1 tbsp olive oil for sauteing

dressing:
1/4 cup rice vinegar
1/4 cup olive oil
1 TBSP sugar
1 tsp salt
1/4 tsp pepper

Tilapia
1 16 oz frozen tilapia defrosted
2 tbsp olive oil divided
spice rub:
3 tbsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp white pepper
1 tsp oregena
1 tsp kosher salt

heat 1 tbsp oil in large skillet. add corn and snap peas and saute over high heat for five mnutes until beginning to brown. remove from heat and transfer to a bowl.
mix dressing ing. well
to prepeare the tilapia combine the ing for the rub in a small ziplock bag,rub the fish fillets with 1 tbsp olive oil and then with the spice rub. in the same skillet hieat one tablespoon olive oil. add the fish fillets and cook over high heat for four minutes on each side or until the fish is opaque and nicely blackened. to assemble compbine th e greens, corn, pes and tomatoes and onion in a larger bowl. top with blackened tilapia and drizzle with dressing.
