I want to give a gift to someone who loves knitting. She goes to knitting groups and starts a new project at least monthly. I know nothing about knitting, so I need your help. What can I buy that will be appreciated in context of this hobby?

A tote bag for her knitting projects with pockets for the various accessories and tools, or a book of knitting instructions for various projects.

I don't know anything about size ... I think it matters though - like depending on the thickness of the yarn and or the size you need to knit ...

This is correct. There is no "usual size"--it depends on the project and the individual knitter. Instructions will say "Two size X knitting needles, or whatever size you need to achieve the gauge". The gauge is the number of stitches and rows per inch. If your friend does lots of different projects, chances are she already has an assortment of needles in different sizes. A needle case that will organize a full array of needles in different sizes so that she can see at a glance what she has might be nice. Do you sew? You could make such a roll-up case along the lines of roll-up makeup brush cases. If you don't sew you could make it using a hot-melt glue gun.

A nice tool that one does not precisely NEED--my mom was a champion knitter and never owned such a thing in her life--but might be nice for an enthusiast to have and is not very expensive, either.

ooh I like the second one.
I think either is a nice gift though. or a gift card to a yarn shop.
I wouldnt buy needles unless you know she needs a certain size.
the bags are great though.

Yeah, I would say a bag or a gift card to a yarn store, if you don't know anything about what kind of knitting she likes or supplies she might already have. But yarn is always useful!
