Does egg substitute work in ice cream?

I doubt it. Ice cream uses egg yolk only, full of fat and lecithin, and egg substitute is mostly egg white, almost all protein. Best thing to do is to call the manufacturer. they usually have a toll-free # on the label.

I don't have the egg sub yet, I was thinking of buying it tomorrow since I don't want to use real eggs in ice cream. I don't like the idea of consuming frozen raw eggs.

GR, once you buy the whip and the other ingredients, it's not much cheaper than buying the ice cream already. I wouldn't bother.

I think you can also buy pasteurized eggs (comes in a carton), as well as pasteurized egg whites and egg yolks.

Imala- do you know who makes the pasteurized eggs? I've been looking for them forever but I've never noticed them.
choc moose- ice cream is pretty easy to make and I'm sick of the taste of the store-bought kind. I already have the rest of the ingredients in the house.

GR - no idea, sorry - they were selling them here in RBS around a year ago when we had the bird flu scare, but I didn't buy any so I don't know the brand name and I haven't even heard about them lately.

I have used egg sub. in a chocolate mousse pie. works just fine...not sure if that is the same as ice cream, but it's probably worth a try - much healthier than raw eggs.
