When I was in my shana rishona, I often had an eggplant dip made with chopped eggplant (fried?) with chopped pickles in a sauce of some sort-- maybe with some soy sauce?
Any recipes I could try?

I make a Moroccan eggplant salad.
Eggplant salad recipe:
Eggplant, cubed
red pepper, diced
onion, chopped
parsely, chopped
garlic, minced
black pepper to taste
dash of salt
olive oil
lemon juice
flour, garlic powder, black pepper for dredging
oil for frying*
Dredge eggplant in seasoned flour and fry until golden brown (or spread on a baking sheet, toss with some oil and bake until crispy).
Drain on a paper towel and put into a bowl. Add the red pepper, onion, parsley, garlic, salt and pepper, olive oil and lemon juice. Mix, refrigerate overnight and serve chilled.

my mil makes 2 versions of the same thing
either broil a whole eggplant and scoop out the inside or cube the eggplant then add salt and oil and bake on a high temp until cooked through
dice a green pepper and pickles
she dresses it w/ oil, lemon, salt, fresh garlic and chopped parsley or coriander.
another similar variation is is when she broils it she'll still add the pickles but she'll put mayo, instead of the oil to the above dressing
