ISO non fried recipe for flounder fillets

Any simple recipes? I want to bake the fish in the oven. No frying.

It won't be dry if you cover with sauce or use thicker pieces.
You can cover the fish with tomato sauce, or mixture of mayo and ketchup and bake. If the fish is thin, you should either roll or fold in half (preferably with some stuffing inside to keep it moist).

Though you'll run less risk of dry fish if you stick to sauteeing in a frypan.

The easiest recipe is oriental steamed flounder. Combine 1 tbsp toasted sesame oil and 1tbsp soy sauce, add 1-2 chopped salad onion/scallion and 1/2 teasp grated fresh ginger. Pour over rolled flounder, put a clingfilm on and microwave (or more authentically steam).

I have a delicious recipe of baked flounder with a veg sauce. Oh the veggies are fried but you could probably roast in the oven.

This recipe isn't dry and tasted very good. I've made it with fresh basil and dried basil. Both were great:

Omg the BY Cookbook has an incredible one. It's called something like garlic herb tilapia. Let me know if you're interested. Will post.

I dip it in ketchup and mayo and then in cornflake crumbs and fish spice. It's never dried out!

I never tried this with flounder but with salmon I just marinate the fillets in seasame terriyaki sauce then put in a pan add some more terriyaki sauce and bake at 425 for half hour (half time covered half time uncovered).

Spicy Fish

Good with flounder, sole, tilapia, and nile perch (any white meat fish really)

1 large onion sliced
10 garlic gloves pealed and crushed
4 large red peppers, sliced into julien strips
1 tsp / dash of sugar
1 large tablespoon paprika (sweet)
1 large tablespoon paprkia (charif - otherwise known as cayenne pepper)
Olive oil

In a frying pan, fry the onion and garlic until browned, add red peppers and sugar, fry until soft. Add water so that it doesn't burn 4 - 6 tablespoons. Add the paprika and some more water if necessary. Place the fish fillets on top and cover with lid, let steam for about 8 to 10 minutes until fish is done and there's a little sauce left in pan.
