Two kinds of pea salad recipes I use.

2 cups frozen baby peas (preferably petits pois)
1 pkg radishes
mayonnaise
ground pepper

* Defrost frozen peas, rinse and drain water very well. Wash and trim radishes, then cut into slices
or thin julienne. Add enough mayo to coat, season with salt and pepper. Optional to add a bit of lemon
juice if you want it tart. Or serve with toasted almond slices right before serving.

2 cups frozen baby peas (preferably petits pois)
1 package white mushroom
1 dash nutmeg
salt & pepper
soy sauce

* Wash, remove stalk and slice mushrooms. Sautee in small amount of oil over high flame.
Cook till most of the liquid has evaporated. Season with s&P and soy sauce.
* Defrost peas, rinse and drain water very well. Add to the mushroom and turn off heat.
Add a dash of nutmeg.
* option--extra yummy if you add caramelised sauteed chopped onions.

3 tbl each sugar, vinegar, olive oil
1 tsp dill powder or a frozen cube or 1 tbl fresh
salt

frozen peas
hearts of palm
baby corn
red onion
cherry tomato

pour on the dressing 30 min b4 serving

always a big hit
