Chocolate mouse

does anyone know how long you can keep chocolate mouse in the fridge and if it freezes well. its thursday afternoon now and I want to make the mouse for 1st night seder is it too early??

Nope it's not. And yes it freezes really well. Since I've done this during the year!

do you think it would be ok to freeze them in little plastic wine glasses with whipped cream on the top??

I use the plastic wine glasses too. It looks pretty and there's nothing to wash. You don't have to worry about scooping it out either. It's already done and no whining from kids either about who got more!!

I just have to correct the spelling for the faint of heart. I think you are talking about chocolate mousse and not mouse. 8)

Just a funny story--we once joked with our kids at dinner that if you put chocolate mousse in a pie shell it should have a different name, like "chocolate buffalo." At this our developmentally delayed son, then about 5 years old, burst into hysterical tears, crying, "I don't want to be a buffalo!" Seems he finally got the idea of when we always said, "you are what you eat," right at the wrong time and took it literally...Maybe you had to be there, but it was really cute to cuddle him and explain.

Chocolate Mousse Or chocolate pudding, if you‘re pressed for time and bought a big milk and want to use it up anyway.
You need patience to do the three steps, but it's well worth it, just like in a restaurant!
Melt 4 oz bittersweet chocolate, 4 oz semisweet chocolate (yes, two different kinds really DO matter), 2 T marg, and 1 T rum or vanilla or orange juice, 1 tsp almond extract, 1 T instant coffee, over double boiler.
Beat 5 separated eggs with 1/2 cup sugar. Beat in saucepan with whisk until thickened and creamy. This will cook it.
In small mixer bowl, mix 10 oz Rich's dessert topping until stiff. Mix everything together until blended.
Put in 9 by 13 pan or shallow Tupperware and let set in fridge or freezer. Serve cut into wedges with toasted nuts on top. It freezes fine but tastes much better when defrosted.
Serves 10 - 12 3/4 inch wedges.
