Lemon-dilly seafood w/veggies

Lemon-dilly seafood w/veggies
from clean Eating

4 tsp olive oil
3 cups leeks
2 cups cut up carrots
2 cups lima beans
half cup white white or broth
salt and pepper to taste
3/4 lb of either mock shrimp or lobster or both
4 cloves garlic, minced
half cup chopped dill
1 T capers
1 tsp lemon zest
1 tsp lemon juice

You heat half the oil and add your leeks, carrots, and beans for about 10 minutes. Add the liquid and flet cook until veggies are tender, another 10 minutes. Season and remove from flame.

In another pan, heat the other half of the oil, add the fish, and stir in your garlic, dill, capers and lemon. Combine and serve.
