I don't know if there's a thread on this anywhere, but doesn anyone have any good ideas/directions for weekday meals (stews, chicken/potatoes, etc) in a croc pot? How, what, how much, how long............ Thanks!! looking forward!

I make meatballs in the crockpot and they come out absolutely delicious-- much better then on the fire.
I pour a can of tomato sauce (if using tomato paste then pour in equal amount of water), brown sugar and vinnegar into the crockpot.
Add a chopped onion.
Mix around with a spoon.
Mix the chopped meat with bread/corn flake crumbs, 1 egg per pound, spices, ketchup, and a drop of cold water.
Drop balls into the sauce and cover.
I cook on low for about 9 hrs while I'm at work, but have left it up to 11 hrs.
If you need for shorter time, you should probably put on Auto, or on high for part and low for part.
(serve on top of rice rather then spagetti for a mushy hearty dinner!)

CHICKEN AND SAUSAGE GUMBO
3/4 cup all-purpose flour
1/2 pound smoked sausage -- sliced
3/4 pound chicken breasts -- cook and shred
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
8 cups water
2 cloves garlic -- minced
1 bay leaf
1 1/2 teaspoons cajun seasoning
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
dash hot sauce
3/4 cup sliced green onions
4 cups hot cooked rice
Prepare chicken breasts and shred. Set aside. Brown sausage, onion, and green pepper in skillet. Drain fat. In Crock-Pot, combine shredded chicken, sausag e mixturee, celery, water, and seasonings. Cover and cook on Low 6 to 8 hours or on High 3 to 4 hours. serve over rice and garnish with the green onions. Serves 8 to 10

Yesterday I layered baby carrots, baby red potatoes, sliced onions and a top rib roast in the crockpot. I put in a package of onion soup mix and one bottle of beer. I cooked it on high for 8 hours. Came out great!
