Whisk published a recipe for a sweet potato and lettuce salad which inspired me to create a version of a similar salad- the sweet potato orgennata from Cafe Muscat- it is a whole meal in one and super delicious
1 bag chopped romaine
1/2 pack cherry tomatoes cut in half/ I used about 8 campari tomatoes cut in quarters
1/3 of pack tnuva feta grated or diced- grating allows you to use less and still disperse the flavor
1 sweet potato cut into match sticks
1/2 cup cashews- roasted without salt ( you can substitute peanuts or pumpkin seeds)
optional- 1/2 red onion sliced in rings
optional- 1/2 cup small salad croutons
in a small sauce pan or frying pan heat an inch of canola oil until hot- fry the sweet potato sticks in 5-6 batches until golden/ browned on the edges- drain well on paper towels
while this is frying assemble the rest of the salad
dressing-
1/4 cup olive oil
2 tblsp lemon juice
1 tblsp dijon mustard
1-2 tsp agave syrup or honey
salt and fresh pepper to taste.
toss together salad with dressing to taste, top with sweet potatoe sticks and cashews
you can also add croutons if you want. The cafe muscat version has them as well as thin cucumber slices- but I left them out.
