Does anyone know how Pita Off the Corner (schawarma...) on e. 4 and P makes their potato salad? It is so good. I'm not sure if they put in some kind of sefardi spice- because the owners are sefardic...
I haven't been able to recreate it. What am I missing?
It's mayo based and has a light orange/light yellow color. It doesn't have mustard. I thought it might be from eggs, but just can't seem to recreate the taste.
Anyone ever taste it and has any idea how to make it?

I once asked if it had mustard- and they said no. It doesn't really taste like it does. I've never used mustard spice- but I'm assuming it would have a mustard type flavor and I'd recognize it.
It also doesn't taste like it has cumin- I'd be able to tell. Turmeric- hmm maybe. I'll try that, thanks.
If anyone has any other ideas about that special spice they put in- please post. It has a distinctive flavor and I just don't know what it can be.

I tried the turmeric- but it's not it. I also put in eggs and that reminded me of similar color. but there's still something in there- I don't know about.
I read that hawaij is a mixture- and has cumin and other spices- but I think I'd recognize that if it were in it.
I always put in a little sugar too.
thanks for all the suggestions, if anyone else has eaten it and has any other ideas, I'd like to hear them

Is it sweet or savory? Or both?
Does it have tang, like a cider vinegar?
Are you sure it doesn't have a mediterranean flavor?

I'm trying to remember from the last time I ate it. It's not really sweet but not really savory either. it's not too tangy- there's probably only a bit of vinegar in it and I dont think it has any mediterranean spices.
zigi, I can't remember- were there carrots in there too (cooked, uncooked)? (peas too?!- don't remember. all I recall is the taste is amazing)

I think it has cumin, which is yellow, and is used in much of sefardic cooking.

But it doesn't have a cumin taste- and cumin's a really strong flavor. What else could it be?

If it's not cumin (though I do think it might be cumin mixed with other mediterranean spices so that the cumin doesn't dominate), then I think it's a nice Dijon mustard with the mayo and spices.

I did ask them once if it has mustard- and they said no. As for cumin- don't know. I'll try that but I really don't think that's it.
