description: this soup takes a little bit of
time to make, but if you prepare
the ingredients the night be for it
will be worth it after it's made
because it tastes great!

ingredients: 1 tbsp Olive Oil
3 Large Leeks Trimmed and Chopped
1 Clove garlic, finely chopped
3 Large potatoes, peeled and diced
5 cups homemade chicken stock
(I put one cup per person of water
and one tbsp per cup of chicken
powder stock)
1 tsp chopped fresh thyme or
pinch dried
(I didn't use Thyme)
½ tsp pepper and Salt to taste
(Pepper and salt was up to me and
who I was cooking it for)
¼ cup chopped fresh chives or
green onions
(Chives and green onions are an
option I didn't put it in)

directions:
1) Heat oil in large saucepan or
Dutch oven. Add Leeks and garlic.
Cook gently for 5 to 7 minutes, or
until leeks wilt. Add potatoes and
combine well.

2) Add stock and bring to a boil.
Add thyme, pepper and salt. Reduce
heat and simmer gently for 20
minutes, or until potatoes are tender.

3) Puree soup through food mill or
in food processor or blender.

4) Return soup to heat and heat
thoroughly. Taste and adjust
seasonings if necessary. Sprinkle
with Chives if you'd like before
serving.
