I made chicken salad. Shred the chicken, add onion, pickles , jalapeños, really any vegetables you like.
Add mayo, mustard, spices.
Delicious

Pulled chicken pizza
Sauté an onion till golden. Add pulled chicken and whatever sauces you like; bbq, soy, Worcestershire etc. . Sauté for another few minutes. To make it even better, add diced pastrami.
Spread garlic mayo over flatbread. Spread pulled chicken and bake till golden.

I find that I can never disguise that boiled chicken taste and my family just does not go for it....not pot pie, not shredded, not nothing. For this reason I mainly use necks, wings or skeletons for soup, so I don't feel bad about throwing chicken away..

I remove the chicken bottoms after an hour of cooking. Makes a huge difference.
I also use chicken bones, which I leave in the pot and then discard.

I put in pan with bbq sauce snd some water and shred.

Great for shredded chicken pizza on pita. I use leftover chicken for this. I skip the Mayo on top. My kids love it.

Also great filling for

Tacos
Tortillas

Chicken pot pie - here is a recipe using chicken soup leftovers:

If you have done soup left turn it into a shredded chicken soup Add a boiled zuchhini and potato and blend to thicken. or barley. And then it’s a new soup.

Remove the bottoms after an hour and separate the thighs and drumsticks.
In a ziploc bag, combine a cup flour with a tbsp each of salt, pepper, garlic powder and paprika. Place chicken in bag and shake well to coat.
Line a 9x13 with aluminum foil and dot with small pieces of margarine. Place chicken, skin side down, in pan with enough space around each piece. Use 2 pans if necessary. Put a piece of margarine onto each piece of chicken. Bake uncovered on 425 F for half and hour. Turn over chicken and bake for another 15 minutes.
It’s crispy, tasty and delicious.

I was gonna write this. I sometimes make it on a wrap to save carbs
I like to top it with crispy onions. It’s a winner

I actually cook plenty of extra chicken in the soup to use for a supper during the week.
I usually alternate between the following 2 recipes - they’re both actually favorites in my house.

Shredded chicken as many posters mentioned (sautéed onion and garlic, barbecue sauce) - I serve with salad, fries or rice, and pitas, taco shells or wraps

Chinese chicken stir fry: sauté tons of onion and garlic, maybe fresh sliced mushrooms, matchstick carrots, and/or celery, add chicken strips and continue sautéing (browns and gets great flavor), add cooked rice or lo mein noodles and veggies (mushrooms-canned, broccoli, baby corn, green beans- depending on which kids are home and their current preferences), and generously add soy sauce or coconut aminos, and then season with salt, pepper, garlic powder, crushed red pepper, hot sauce … to taste.

Shawarma wraps - saute sliced onions, add shredded chicken, salt and shawarma spice, saute till the chicken is heated through and tastes like shawarma. Make a wrap with the chicken, techina and whichever veggies you like. Or just serve with pitot and techina. I do this with leftover chicken wing meat from the soup but it should work with any soup chicken.
