Tomato Rice Soup
2 large onions, finely chopped
4 Tbsp EV olive oil
2 Tbsp flour
1 (16 oz.) can good quality tomato juice
2 cups water
1 tsp sugar
1/2 cup uncooked rice
salt and pepper to taste
In a soup pot, saute onions in oil until they just start to turn golden.
Add flour and continue stirring for a minute or two. Do not allow flour to burn.
Quickly pour in tomato juice and water. Bring to a simmer. Add sugar.
Pour rice into pot. Cook on low heat until rice is cooked, about 20 minutes.
If soup is too thick, add more water.
Season with saly and pepper to taste.
Add a little more sugar if the soup still tastes acidic.

Thanks so much!! I was all psyched up to make it the other night and when I realized the recipe was missing I tried it by memory... Boy did I get it wong, I did 1 cup of rice, and 1/2 cup of sugar, instead of a tsp!
So glad to have it, thank you!!
