OK, so who took it???  I just went looking for it & it's gone. One of my DD's must have it, but I'll try & get it for you.

1 red onion quartered
2 large leeks trimmed, halved lengthwise
1 acorn squash seeded and cut into 2 inch chuncks w/skin
2 sweet potatoes cut into 2 inch chuncks w/ skin
1 1/2 c. baby carrots
2 parsnips peeled cut into 2 in chuncks
2 zucchini cut into 2 inch chuncks w/skin
1 can chick pease drained and rinsed
1/2 c. raisins
1 c. olive oil
juice of 1 lemon
5 cloves garlic
1 tbls. paprika
2 tsp. coarse salt
1 tsp. cumin
1 tsp. ginger
2 tsp. tumeric
3 sprigs parsley chopped (leaves)
3 sprigs cilantro chopped (leaves)
put veggies in dish
mix dressing
pour over
bake at 350 1 1/2 hours
whew long recipe!!!

Thanks, soldat. I'm disappointed, I think it would be the first time I'd used any recipe! Don't know why my DD would want the book, though!
