I'm looking for a salad recipe with shredded cheese sprinkled on top to serve as lunch or light dinner.
If anyone can help, I'll be most appreciative!

Ceasar salad? Romaine lettuce, croutons and grated cheese. I sometimes add cherry tomatoes.
ETA: do you want the salad to be the entire lunch or dinner?

Caesar salad sounds like a nice idea; to use shredded cheese instead of Parmesan.
I'd love to hear of something different though.
Any other ideas?

I would do a mixed greens salad with other added veggies (cucumbers, red peppers, tomatoes, snap peas, etc) then add shredded cheese and fake bacon bits with croutons. I like the kens country french dressing.

If you don't keep cholov yisrael, you can make mock taco salad.
I take a package of Morningstar Crumblers (fake ground beef) and warm it up in a skillet with a little olive oil. I then add a packet of taco seasoning and 3/4 cup water and let it simmer for a few minutes.
Dump the Crumblers on top of a bowl of salad with whatever veggies you like and sprinkle cheese on top. (You can also have salsa or sour cream on top, or on the side.)
It's delicious and a full meal all in own.

Thanks everyone!
At the end I bought a piece of mozzarrella and cut it into smalls cubes.
For the salad I used a bag of mixed greens, cubes of cheese, grape tomatoes, slivered almonds and craisins.
I paired it with a dressing from Q&K - 4 Tbsp mayo, 2 Tbsp balsamic vinegar, 1 Tbsp Dijon mustard, 1 Tbsp sugar.

Ok, I know this is a bit late, but did you get the Shavuos recipe supplement to the Binah? There was an amazing recipe in there that became my new favorite, and I serve it with fleishigs and just skip the cheese. It's the lettuce salad with avocado dressing. Know which one I'm talking about? If not, I can post it!

If not, I can post it! | For some reason I didn't get that issue Maybe I didn't realize that a new one had come out right before Shavuous and therefore I didn't look for it or buy it?
I'd appreciate if you could post the recipe for me.

No problem! It's really great!!
Dressing:
medium ripe avocado, peeled and cubed
1/2 c mayonnaise
1/3 c oil
1/3 c water
3 T lemon juice (I use a drop less so that it's not so tart)
2 garlic cloves, peeled (I use crushed cubes)
1/2 t salt
1/4 t hot pepper sauce
bunch romaine lettuce torn
1 12-oz box of grape tomatoes, sliced
1 c shredded mozarella and cheddar cheese
1 2 1/4 oz can sliced black olives, drained
2 scallions, chopped
small bag chips of your choice (I use terra sticks)
Blend dressing ingredients until smooth. (I whisk with a fork but you should probably use a blender!) Layer salad ingredients, pour dressing over, sprinkle with chips.

Here it is-
1/2 red onion
1 box grape tomatoes
2 bags euro salad
1/2 bag shredded mozzarela cheese
Mix
Dressing-
1 c mayo
1/4 c vinegar
1/4 c water
1/4 c sugar
2 crushed garlic
squeeze of mustard
blend the dressing
Mix in salad
Top with toasted garlic croutons
