Apricot Baked Salami

2 lb Salami Roll
1 1/2 cup honey mustard
1 1/2 cup Arpricot Jam

Boil honey mustard and jam.

Place the salami in a baking pan. If the salami is very wide cut cut down the middle if very long and can't fit in cookie sheet then cut in half. Cut slits down the salami abt every 1/2 inch. Pour the sauce over the salami. BAke uncovered for abt 2 hours. Baste every 15 minutes.

Serve over rice.

[NOTE: If you don't have honey mustard you can make 1 1/2 cup with:
3/4 cup mayo
3/8 cup mustard
3/8 cup honey
1 T rice vinegar
dash salt
]

I'd like to try it with a mixture of turkey and salami but haven't done that yet.
