So I was planning on making Chocolate Moose's Pasta Cubano but I was missing some of the ingredients so I ended up making this instead and it came out sooo good!
Here's the recipe (I didn't really measure anything, you can eyeball it, but ask me if you'd like more specific measurements)
You'll need:
chicken breast
olive oil
zucchini
diced tomatoes
onion
garlic
oregano
basil
black pepper
salt
garlic powder
chicken broth
flour
First saute some chopped chicken breast in olive oil with salt, pepper, and garlic powder. Remove from the pan.
Next, saute some chopped onion and garlic. When it gets translucent, add a chopped zucchini, some salt, black pepper, dried oregano, dried basil, garlic powder and if you want some heat add some hot red pepper flakes.
Cook for a few minutes until zucchini is a bit soft, make sure to toss everything around so it doesn't burn. Then add some canned diced tomatoes with some of the juice, some chicken broth, and a little bit of flour or cornstarch to thicken it up.
Finally, add back in the chicken and let the whole thing simmer for a while.
Serve over pasta, rice, or just by itself!

BTW, I didn't have any when I made it, but mushrooms would be great in this.

I made this for dinner the other night - and it got gobbled up by everyone! No leftovers! DD demanded I make it again!
