I wonder if you weigh the chicken (without the bone) if cutlets would end up so much more expensive. When you buy legs/quarters you are paying for the bone.
Regular chicken breasts not trimmed or extra thin are often the best bang for your buck.

I thought so too but I’m not sure.

Today I paid

3.69/lb chicken breast bone in
5.99/lb chicken breast boneless.

Typically 20% of the chicken breast is waste (unless you make soup out of it. Then there is much less waste).

Even with throwing out 20% the price of chicken breast bone in is cheaper than chicken cutlets. It comes out to like $4.39/lb for the chicken breast left over.
So still a decent savings. And you have the option to use the bones to make your chicken soup so an additional savings.

People don’t realize there are ways to save dollars in small areas. It adds up.

I once tried to buy whole chickens and cut them up myself, it comes out much cheaper. Just a lot more work
