My mother puts all the vegetables in a cheesecloth, and then she serves them in a separate bowl. That way everyone can take what they want, and she doesn't have to bother asking people what they want in their soup. She always puts in onion, carrot, celery, parsnip and zucchini.
I never make chicken soup, so I can't give good advice about what veggies to put in.

I like to take the celery tops and chop it up into the soup.
My regular veggies include: carrots, onions, potatoes, sweet potatoes, zucchini, celery greens, 'soup greens' and just a small amount of fresh dill.
My occasional veggies are: celery root (it's a knobby, white vegetable) and pumpkin.
The zucchini I cut large chunks (generally 2 inch thick rounds cut in half or quarters). The potatoes, sweet potatoes and carrots I try to get uniformly sized and the onions are a large dice.
I personally like it when some of the veggies 'fall apart' because it adds texture and thickens the liquid.
I'll often serve it with rice, wheat berries, cous cous or barley.

Kohlrabi is a root vegetable. Here in israel it is usually large and round. Sorta greenish. If it looks too white don't buy it because it usually means it's not good. Once I even bought purple kohlrabi. It's a very crunchy vegetable. Tastes a bit like cabbage. It's great to nosh on or add to salads. Sometimes I make coleslaw by processing kohlrabi and carrots. It's really delicious.
I LOVE KOHLRABI. Can you tell?

My mom would serve extra knaidlach, or veggies or pupiks on the side,, I always liked that way of doing things. I dont do it that way these days, and I cant say why, I just dont. My husband does not like chicken soup with lots of veggies in it,, he prefers very little veggies, and I am the more the merrier when it comes to the vegetables.. so I do them both, one week like this and one week like that, and both of us are happy.

I like the basics: celery, carrots, parsnip & parsley ... tons of garlic cloves & onions ... serve everything in bowl with chicken and that is our meal ...

Sure, I've used garlic cloves. It's add some flavor, but it's really not that strong. If you wouldn't know it's there, u wouldn't taste it.

I use carrots, celery, green pepper, zucchini, onion, garlic cloves, parsnip, parsley root & kohlrabi. oh and I don't make my chicken soup with chicken, I use turkey drumsticks. it's all my mother's fault.

Sometimes I use a cloth but I put the chicken in it, not the vegetables because I think the soup comes out clearer without little pieces of chicken floating around and no one in my family likes eating the chicken from the soup.
I put a lot of veg. in my soup! I usually put onions, carrots, celery (the usual) then I add zucchini, sometimes a sweet potato, a celery root (believe it or not it adds flavor!) 2-3 garlic cloves, parsnip, turnip and sometimes leeks. Occasionally I'll add fresh parsley as well.

I put three whole cloves of garlic (peeled) in an 11 qt. pot of soup. I think it give a great taste. Just be sure to fish them out before serving.
I stick a toothpick through them so its easier to find (I found that hint in the Spice and Spirit cookbook).
I mostly use bones and put in a bag so it doesn't fall apart. this week I put in chicken quarter and we will have the chicken for supper. I put some rice and water in the bottom a pan, layered some soup vegetables and chicken. I then put on some spices and oil and reheat. An easy Thursday night supper. (dh does not like plain soup chicken)

We love the vegetables in the soup-
we put in whole cloves
parsley-slit open so flavor comes out
whole onion
small piece green pepper
these four come out after it's cooked
peeled kohlorabi
carrots
celery
squash-semi peeled and cut in big chunks
my sister puts in sweet potatoes

any root vegetable is good ,not peppers not good, gives a bitter taste I dont know what that person up there is talking about peppers yuck.....anyhow the cheese cloth thing is where you put different spices into like thyme,oregano, chinese five spice, pepper, anise(if u like) bay leave ,you tie it up with string keep one end long so you can tie it to the pots handle and take it out when its done(sachet de piece I think its called a spice sack or somthing ), I like to sautee the chicken and the vege in hot oil befor I pour my chicken stock on top of it that will give it more flavour...I think kohalrabi is in the turnip family I like to use celery root to add alot of flavour. dont put in peppers its funny how she dosnt like red pepper because I make this red pepper soup that is so good the trick is to take the skin off but green peppers have a bitter taste I dont get it any way im ramblling good luck.

I dont put in lots of veggies except weekday,and pesach.
shabbos,I hate chunky soup,I like matzah balls,shredded carrots and flavor of other things.

Why does the soup NEED to be clear???
I always put zucchini and parsley, celery and carrots in my soup cut small. You can throw in any vegetable you like. There is no reason to use bags. Cooked veggies in soup are great and throwing them out is a huge waste.

red pepper gives the soup an amazing color and delicious taste. My parents ate by us this week, and my father commented on this weird, but delicious flavor my soup had.. it was the red pepper! he is not used to it, but drained his bowl! was so good!
I put in:
carrots
dill
parsley
sweet potato
kohlarabi
celery root ( knob celery)
squash
ginger- small piece
parsnip
chicken bones ( in cheesecloth)
chicken breast with bone in
1 chicken bottom
really delicious!
