So, I'm embarrassed to say, I've never put any other vegetables besides carrots, celery and onions in my chicken soup. It's how my mother makes it and so I learned from her. This week, I bought squash, kohlrabi and zucchini to put in the soup. BUT HOW??? Do I peel the squash? What on earth do I do to the kohlrabi (it looks like a martian to me...) Do I peel the zucchini? How do I keep zucchini seeds from getting all over the place? I have a cheese cloth, but what do I do with it? Do I put the seedy vegetables inside? How do I tie up the cheesecloth?
Now I understand why people post amother on recipe forums. I am embarrassed for my ignorance!!! (But not embarrassed enough to post as amother...)

zucchini you can just wash and put in whole. Don't cut it up or it will become a big bowl of mush.

I cut zucchini up and it's not mush. But I cut it in small peices- not slices.

Sure, you can cut kohlrabi in quarters and add it. Turnips as well. We put in celery, green peppers, parsley root, parsnip, sweet potato, yellow squash, zucchini, butternut squash (DELICIOUS in soup). There's so much u can add, which vegetables to do u like?

I put all the vegetables which I am not gonna use but adds taste to the soup into a cooking net bag and tie it up I do the same with the chicken bones and then I just throw away the whole bag and the soup stays nice and clean.
The vegetables I use are carrots, squash and sweet potatoe these three things I pit directly in the soup. then in the bag I put leek, celery, parsnip and turnip.

GOOD LUCK

sweet potato is really good too!
I peel and slice (thick) my sweet pot, carrots, yellow and green squash. I never get a mush.
I had unpeeled squash in someones house and it was soooo bitter!

Do you want your vegetables swimming in the soup and served with it? I.e. a chicken-veggie soup?

I do it both ways.

My first way - a typical chicken soup with just onion and carrot. Onion I take out, carrot I leave, but these are big pieces.

THe second way - chicken-veggie soup. Cut your veggies in bite-size pieces, and put them in the soup at most an hour, at least 30 min before the end! I.e. start the soup as usual, skim all the dirt, let it simmer for a good while, then put in cubed veggies. Zucchini you can peel or not, up to you, but cut it in cubes. At the very end I put in some chopped fresh dill.

Ok, I made the soup and added in zucchini. squash and kohlrabi and it tastes exactly like my soup always does! The soup is delicious, but I was hoping for a little different flavor. Oh well, I'll try again next week

sweet potato makes the soup a tad sweeter
parsnip also changes the taste

next time try putting both in for a great combo

I always feel cheated when I go to people's houses for a meal and they do this. Do you at least serve the vegetables so people can put them into their own bowls of soup if they want to?

I never knew you can cook kolrabi !
I always eat it raw in salads.

I was here about 20 years before I even tried that !

And I leave the veg in the soup - onion, carrot, kishuim(corgette or zucchini) pumpkin, and celery. Fresh parsley if GK is available.

I put in cabbage and potato - also celery, carrot and onion - used to put in tomato, but no one ate it, so it was just wasted. Also, LOTS of dill - gives a really nice flavor!

Peppers always add a distinctive flavor to soup, it tastes very different when I don't put it in. Green peppers are really good, red pepper gives an even stronger flavor, so not everyone cares for it. Parsley also adds taste. I put it all the leaves from one bunch of parsley, with several of the roots.
