I have a really easy Moroccan fish recipe. I usually leave out the olives, lemon, saffron and switch out the parsley for a bunch full of cilantro and it comes out great. You also don't need to marinade the fish for too long and it's still great. Just let it sit while you are cutting up the veggies.

Chossidmom, I don't think mushy fish has nothing to do with your cooking. Did you say it was frozen? Chances are likely the processor added too much water before freezing fish fillets. There were some consumer reports about companies adding water to increase the weight.

The package had 20% added water!!! All fish here has loads of water . I had to defrost a ton of ice on the fish.

put in frying pan (no frying dont worry)
slice fresh garlic and soy sauce
cover on low flame till tender,
the fish gets done thru steaming.
works with all fish, salmon included.
